Recipe Ingredients for Zucchini Rice Casserole

2 lbs zucchini
1 cup shredded mozzarella cheese
1/4 cup
2 cup cooked brown rice
1 egg
1 cup bread crumbs
2 tbsp
1.33 cup

Recipe Directions for Zucchini Rice Casserole

  1. Prepare brown rice as directed.

  2. Slice zucchini and steam until just fork tender.

  3. Sautee rice, zucchini and butter until golden. Add cheeses, salt and pepper.

  4. Allow to cool slightly and add beaten egg. Place in 9x13 casserole dish.

  5. Bake in oven at 350 for 20 minutes.

  6. Melt 2 tbsp butter and bread crumbs. Spread over top of casserole. Bake an additional 10 minutes or until topping is brown.
