Nice summer salad - good way to use zucchini & fresh basil...Yummm! Good as a side salad or add chicken for a main course...!

Recipe Ingredients for Zucchini Ribbon Pasta Salad w/Parmesan Curls

2 lbs. zucchini
2 garlic cloves
1 tsp salt, divided
1/3 c extra virgin olive oil
3 T lemon juice
1/4 tsp pepper
4 oz. whole wheat spaghetti
1/3 c fresh basil, julienned and divided
1 T grated lemon peel
2 oz. Parmesan cheese, shaved into curls, divided

Recipe Directions for Zucchini Ribbon Pasta Salad w/Parmesan Curls

  1. Shave zucchini lengthwise into long thin ribbons.

  2. Mash garlic and 1/2 tsp salt into paste. Combine zucchini ribbons, garlic paste, oil, lemon juice & pepper in large bowl. Cover & refrigerate overnight. Cook pasta (calls for Fettuccini, but any whole grain pasta would work). Drain and rinse in cold water. Toss zucchini mixture with 1/2 of basil, lemon peel and remaining 1/2 tsp salt. Add pasta & toss. Add 1/2 of cheese curls & toss. Serve topped with remaining curls & basil.

  3. Makes 6 (1-cup) servings.
