Recipe Ingredients for Zucchini Ribbon "Lasagna"

3 cup Pasta Sauce Tomato Basil
1 medium Squash, Summer, Zucchini, Includes Skin
1 cup Part-Skim Ricotta Cheese
0.3 tbsp Olive Oil

Recipe Directions for Zucchini Ribbon "Lasagna"

  1. Make the sauce: Pulse tomatoes with

  2. juice in a food processor until finely

  3. chopped. Heat oil in a large straight-sided

  4. skillet over medium heat. Cook

  5. onion and red-pepper flakes, stirring

  6. occasionally, until onion is tender,

  7. about 8 minutes. Add turkey; cook,

  8. breaking up any large pieces, until

  9. browned, 3 to 4 minutes. Add tomatoes;

  10. bring to a boil. Reduce heat; simmer

  11. until thick, about 20 minutes. Stir

  12. in oregano and salt. Let cool.

  13. Make the lasagna: Preheat oven to

  14. 375 degrees. Slice zucchini lengthwise into

  15. thin strips (about 1/8 inch thick) using

  16. a mandoline or a sharp knife. Place 5

  17. or 6 zucchini slices, overlapping slightly,

  18. in the bottom of an 8-inch square

  19. baking dish. Top with 1 cup sauce. Dot

  20. with 1/4 cup ricotta. Repeat twice with

  21. zucchini, remaining sauce, and 1/2 cup

  22. ricotta, alternating direction of zucchini.

  23. Top with remaining zucchini,

  24. alternating direction; brush with oil.

  25. Dot with remaining 1/4 cup ricotta. Season

  26. with pepper. Bake, uncovered, until

  27. lasagna bubbles and top browns,

  28. 50 to 60 minutes. Let stand for 10 minutes.

  29. Garnish with oregano.
