Recipe Ingredients for Zucchini-Raisin Muffins

2 large eggs
1/2 cup vegetable oil
1/2 cup honey
1 teaspoon vanilla extract
1 cup whole wheat flour
1/4 cup milled flaxseed
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup zucchini, shredded
1/2 cup golden raisins

Recipe Directions for Zucchini-Raisin Muffins

Preheat oven to 350 and spray a 12-muffin pan with cooking spray. Whisk together eggs, oil, honey and vanilla. In a large bowl blend the flour, flaxseed, cinnamon, baking powder, soda and salt. Add wet ingredients to the dry and mix well. Fold in zucchini and raisins. Transfer to muffin cups and bake for 20-25 minutes.
