Makes 16 small or 8 large (for a bun-size) burgers. Savory. Could be made low fat by using less oil or baking them. Egg whites could maybe be substituted as well but may effect the way that they hold together. Can be made gluten free, check for contamination issues.

Recipe Ingredients for Zucchini Quinoa Burger

1 cup quinoa
2 cups chicken broth, reduced sodium
1 cup chopped mushrooms
1 small tomato
1 pepper, sweet, green
1 cup zucchini, shredded
1/4 almonds, slivered
4 leaf basil, fresh
2 tbsp rosemary, fresh
4 tbsp parsley, fresh
3 eggs
1/4 cup oatmeal
3 tbsp corn oil

Recipe Directions for Zucchini Quinoa Burger

  1. Soak the quinoa in 2 cups water for five minutes. Rinse and drain.

  2. Wash, dry, and chop herbs finely.

  3. Meanwhile, prepare the veggies (chop tomatoes) and add to large pot with rinsed quinoa, stock, almonds, and herbs.

  4. Stir and bring to boil, then simmer covered for 15 mins.

  5. Stir and let cool until able to handle. I put it in a glass bowl in the fridge for 15.

  6. Beat eggs and add to mixture. Add oatmeal and stir well.

  7. Let rest for 15, this helps keep it together.

  8. Add 1 tbsp of oil to pam and heat on medium heat.

  9. Form burgers and add to pan. After every batch, add a little more oil.

  10. Serve in a lettuce wrap, plain, on a bun, with a salad, etc. Can be made in advance up until the point where the egg is added.
