Recipe Ingredients for Zucchini Quinoa Bread

0.33 cup Coconut Oil
0.33 cup Applesauce
2 medium Egg, Whole
1 large Egg, White
12 oz No Calorie Sweetener
1 Teaspoon Baking Powder
0.25 teaspoon Baking Soda
1 tsp Salt, Table
1 tsp Vanilla Extract
1 tsp Cinnamon, Ground
1 cup Organic Quinoa Flour
1 cup White Whole Wheat Flour

Recipe Directions for Zucchini Quinoa Bread

  1. Melt Coconut Oil - Peel and grate Zucchini.

  2. Preheat oven to 350 degrees. Grease and flour two large bread tins. Set aside.

  3. In an electric mixer bowl, beat together the coconut oil, eggs, and sugar. Toss in the remaining ingredients and beat just until mixed together. Spoon half of the mixture into your prepared bread tins.

  4. Sprinkle a bit of sugar on top of each loaf (optional), then toss in the oven and allow to bake for 45-50 minutes, or until the center of each loaf springs back when touched lightly with the tip of your finger.

  5. Cool before serving slathered in butter & strawberry jam or whipped cream cheese.
