Tasty quiche; can also use crescent rolls instead of whole wheat pie crust.

Recipe Ingredients for Zucchini Quiche

4 c. diced zucchini (4)
1 c. onion
1/4 c. butter
1/2 tsp. dry parsley
1/2 tsp. pepper
1/4 tsp. garlic powder
1/2 tsp. basil
1/2 tsp. oregano
2 eggs, beaten
1/2 tsp. salt
8 oz. shredded mozzarella cheese
1 c. whole wheat flour
1/4 c. flour
1/2 tsp. salt
3 T. butter
4 T. water

Recipe Directions for Zucchini Quiche

Cook & stir zucchini and onion in butter. When soft, add seasonings, eggs, and cheese. Line crescent rolls in pie pan and brush inside with Dijon mustard. Add filling. Bake at 375F for 18-20 minutes or till knife inserted in center comes out clean.
