Recipe Ingredients for zucchini quiche

8 oz frozen puff pastry
2 tbsp poppy seeds
6 zucchini
2 tbsp butter
2 eggs
1 egg yolk
1/2 lb arugula
2/3 cup half and half
8 tbsp parmesan cheese

Recipe Directions for zucchini quiche

  1. Preheat oven - 400. Butter a 10-inch pan.

  2. Place pastry on work surface and sprinkle with 1T poppy seeds. Roll out into a thin sheet. Line prepared pan with pastry. Cover with a sheet of wax paper, weight down and bake 20 min.

  3. Slice zucchini lengthwise. Saute in butter - 8 min.

  4. Beat eggs and egg yolk until frothy. Season with SP. Add arugula, cream, and parmesan. Mix in zucchini.

  5. Pour into pastry and sprinkle with remaining poppy seeds.

  6. Bake 25 min.
