Recipe Ingredients for Zucchini Puree

7 cups chopped zucchini
2 cups water
3/4 cup skim milk powder
1 1/2 teaspoon salt
1 teaspoon pepper
1/2 teaspoon celery seed
1/2 teaspoon basil
1 cup chopped onion
1/4 cup yogurt
1/4 cup chopped scallion

Recipe Directions for Zucchini Puree

  1. Put zucchini and onion with water and salt and cook until zucchini is tender

  2. Puree in a blender and return to double boiler or kettle

  3. whisk (or puree in) the dry milk and yogurt (sour cream may be substituted)

  4. Add herbs and serve immediately
