Whole wheat, low-fat zucchini brownies w/ protein powder.

Recipe Ingredients for Zucchini Protein Brownies

1/2 cup unsweetened applesauce
1 1/2 cups white sugar
2 teaspoons vanilla extract
5 scoops 100% whey protein powder
2 cups whole wheat flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini

Recipe Directions for Zucchini Protein Brownies

  1. Preheat oven to 350 degrees. Grease and flour a 9x13 inch baking pan.

  2. In a large bowl, mix together the applesauce, sugar, protein powder and vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini. Spread evenly into the prepared pan.

  3. Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched.
