Adapted from Timber Creek Farms. Use low-sodium broth or self-made vegetable broth.

Recipe Ingredients for Zucchini- Potato soup

1 tbsp. olive oil
1/2 large onion
6 g garlic
1 lb. zucchini
1 lb. potatoes
4 oz. spinach
1 cup cilantro
3 cups vegetable broth

Recipe Directions for Zucchini- Potato soup

  1. 1. Saute chopped onions until soft

  2. 2. Add chopped garlic.

  3. 3. Add chopped zucchini ( 1/2 inch rounds) and potatoes (sliced thinly); stir and coat

  4. 4. Add vegetable broth and bring to boil. Reduce heat to medium-low, cover, simmer until potatoes are soft, about 15 min

  5. 5. Working in batches, puree soup in blender until smooth. Return to same pot.
