Recipe Ingredients for Zucchini Potato Onion Medley

1 medium Red Onion
1 Zucchini
1 medium Red Potato
1/2 t Salt

Recipe Directions for Zucchini Potato Onion Medley

Pre cook the potato in microwave for approximately 2 to 3 minutes. In a saute pan at medium low heat spray with Pam or use a small amount of olive oil (Pam better) and add diced onion. While onion is sauteing pre cook zucchini in microwave for 2 minutes. Add sliced potato and after the potato has browned add the zucchini. Add herbs de Province, rosemary, tarragon, salt and pepper to taste.
