Recipe Ingredients for Zucchini and Potato Bake

2 medium Squash, Summer, Zucchini, Includes Skin
2 large russet potatoes
0.33 cup olive oil
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 tsp California Style Minced Garlic made from Fresh Garlic
0.33 cup Bread Crumbs, Dry, Grated, Seasoned
2 tbsp parmesan cheese

Recipe Directions for Zucchini and Potato Bake

  1. 1.Preheat oven to 400 degrees F (200 degrees C).

  2. 2.In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.

  3. 3.Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown
