Recipe Ingredients for Zucchini Pizza Casserole

4 cups shredded zucchini (1 very large zucchini or 2 smaller ones)
3 cups mozzarella
1 cup cheddar cheese
1 clove garlic
1 1/5 lbs. ground beef
25 oz. tomato sauce
2 eggs
1/2 tsp. salt
1/2 cup parmesan cheese

Recipe Directions for Zucchini Pizza Casserole

  1. Put shredded zucchini in a colander, sprinkle with salt and let drain for 10 minutes or so. Squeeze out extra moisture.

  2. Mix eggs, half of the cheese and all of the parmesan. Add zucchini and mix well. Spread in bottom of 9x13" greased pan and bake for 20 minutes at 400F.

  3. Cook onion or garlic in skillet. Add ground beef and cook. Add tomato sauce. Spread meat mixture on top of baked zucchini and top with remainder of cheese. Bake for 20 more minutes.
