Pizza flavored Casserole with zucchini as base

Recipe Ingredients for Zucchini Pizza Casserole

7 cup, mashed Squash, Summer, Zucchini, Includes Skin
2 serving Salt Substitute
3 large egg Eggland's Best Egg
3 tbsp Parmesan, Grated Cheese
8 oz Mozzarella, Part Skim Milk Cheese
4 slice (1 oz) Cheddar Cheese
12 oz Ground Crumbles Meatless
3 tbsp chopped Onions
2 medium Carrots
0.33 cup, pieces or slices Mushrooms
15 oz Tomato Products
1/4 tsp Italian Seasoning

Recipe Directions for Zucchini Pizza Casserole

  1. Shred zucchini and place in strainer; sprinkle with salt. Let stand for 10 min and squeeze out moisture

  2. Combine zucchini with eggs, Parmesan, and half of the mozzarella and cheddar cheese.

  3. Press into greased 13-in x 9 in baking dish.

  4. Bake at 400 degrees for 20 minutes

  5. Cook beef, chopped onion, chopped mushrooms, and shredded carrots over medium heat. Drain. Add tomato sauce.

  6. Spoon over zucchini mixture. Sprinkle with remaining cheeses.

  7. Bake 20 minutes longer or until heated through.
