Recipe Ingredients for Zucchini Pie

1 lb mozzarella cheese
1 med. onion
1/8 cup parsley
2 tbsp margarine
8 Pillsbury crescent rolls
4 tbsp prepared mustard
1 cup mushrooms (optional)
4 cups zucchini, peeled, deseeded, sliced

Recipe Directions for Zucchini Pie

  1. melt margarine in large sauce pan

  2. chop onion add to margarine

  3. peel, deseed and slice 1 medium zucchini and add to sauce pan

  4. add parsley and mushrooms

  5. cover and cook until onions are slightly transparent.

  6. while zucchini is cooking prepare crust.

  7. use a 12 inch pie plate and layer the bottom and sides with flattened crescent rolls. press together the seams to form a flat crust.

  8. spread mustard on the bottom of the crust.

  9. Now add the cheese to the pan of zucchini and melt the cheese.

  10. pour into pie shell.

  11. cover with foil.

  12. bake at 350 degrees for 30 min.

  13. take off foil and bake for 10 min

  14. remove from oven and let set 10 min before serving.

  15. this recipe freezes very well.
