Recipe Ingredients for zucchini picnic cake

1/2 cup raisins
1/4 cup water
1/8 cup shortening
1/2 cup applesauce
1 cup sugar
2 eggs
1 tsp. vanilla
3 3/4 cup grated raw zucchini
1 tbsp grated orange rind
3 tbsp orange juice
2 cups flour
2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. salt

Recipe Directions for zucchini picnic cake

Combine raisins and water in a small bowl and microwave for one minute. In a larger bowl, cream shortning, sugar, and eggs. Stir in vanilla, zucchini raisins, orange rind and juice. Sift dry ingredients. Add to creamed mixture. Blend well. Bake at 350 degrees for 40 minutes in a 9X13 pan that has been sprayed with oil. Test with a toothpick. Cool and dust with a small amount of powdered sugar.
