Sliced zucchini and peppers sauteed and tossed with cheese.

Recipe Ingredients for Zucchini & Pepper Saute

3 zucchini, sliced
1/2 yellow bell pepper, chopped
1 tbsp. olive oil
1 tbsp. minced garlic
1 salt and pepper
1/2 cup mozzarella cheese
1/4 cup parmesan cheese
1 basil leaves (fresh if possible)

Recipe Directions for Zucchini & Pepper Saute

  1. Saute veggies in oil over medium heat for 3 - 4 minutes.

  2. Add minced garlic and salt and pepper

  3. Saute another 4 minutes until slightly soft.

  4. Toss with mozzarella cheese.

  5. Sprinkle with basil and parmesan.

  6. Can add other peppers and squash or onions.
