Great for cooking up all those summer zucchini!

Recipe Ingredients for Zucchini, Pepper, Onion Saute (can add 16 oz) mushrooms (add to cal count though)

2 cups zucchini
1 cups peppers
1/2 cups onions
1/4 tbs basil
1/2 tbs oregano
1/4 tsp salt
2 cloves garlic

Recipe Directions for Zucchini, Pepper, Onion Saute (can add 16 oz) mushrooms (add to cal count though)

  1. slice mushrooms, peppers, onion and zucchini. Heat pan with cooking spray or olive oil (add ~13 cal/ serving for each TBS of oil if used). Add vegies and stir in seasoning. Cook until desired texture (Zucchini should be opaque looking if sliced thin). If using cooking spray stir frequently or until mushrooms provide enough liquid to keep vegies from sticking to pan.

  2. These veggies make GREAT (and even better) leftovers!
