Quiche-like zucchini patties baked to perfection.

Recipe Ingredients for Zucchini Patties

4 cups shredded zucchini
1/2 cup chopped yellow onion
2 cloves garlic
2 eggs
2 egg whites
1/2 cup potato flakes
1 cup shredded cheddar cheese

Recipe Directions for Zucchini Patties

Shred zucchini into colander. Let extra liquid drain about 1 hour. Squeeze excess liquid out of zucchini with paper towels. It needs to be as dry as possible. Set aside. Beat eggs until you can no longer see the whites. Add chopped onion and minced garlic cloves. Add potato flakes and cheddar cheese. Work well drained zucchini into mixture with hands until well incorporated. Take a few tablespoons at a time and work into 1/2 inch thick patties about 3-4 inches in diameter. Place on heavily Pam sprayed jelly roll pan and bake for 30 min at 350 degree oven. Turn oven to Broil and broil for about 5 minutes or until tops of patties brown. Serve plain or with favorite marinara.
