Shredded zucchini and veggies baked in thin patties

Recipe Ingredients for Zucchini Patties (baked)

2 cups zucchini, grated
1 egg
1 egg white
1/4 cup onion, minced
1/2 cup potato flakes
1/2 cup carrot, grated
1/2 cup mozzerella cheese

Recipe Directions for Zucchini Patties (baked)

  1. In a medium bowl combine zucchini, eggs, carrot, onion, carrot and cheese. Mix thoroughly.

  2. Line a large baking sheet with foil and spray lightly with cooking spray.

  3. Scoop zucchini mixture 1/4 cup at a time and flatten into thin patties on cookie sheet.

  4. Bake at 450 degrees for 25 minutes and then broil for approximately 3 minutes until browned on top.
