Recipe Ingredients for Zucchini "Pasta" with Chicken and Peppers

1 medium Squash, Summer, Zucchini, Includes Skin
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 medium (4-1/8" long) Onions, Spring Or Scallions
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 tbsp, ground Basil, Dried
1 tbsp Olive Oil
1 breast, bone and skin removed Chicken, Breast, Meat Only

Recipe Directions for Zucchini "Pasta" with Chicken and Peppers

  1. Julliene one zucchini and set aside.

  2. In large skillet, heat olive oil over medium heat. Add chopped green onion, sliced red bell pepper, and diced tomatoes with salt, pepper, and basil. Allow to cook for about 5-10 minutes, stirring frequently.

  3. Meanwhile, thinly slice chicken breast, sprinkle with salt and pepper, then grill or roast.

  4. Add zucchini "noodles" to vegetables in skillet. Allow to cook until slightly translucent to get a nice al dente texture.

  5. Once chicken is throroughly cooked, stir into the skillet with the vegetables.

  6. Add salt and pepper to taste. Enjoy!
