I make this a meal all by itself with a cup of soup. Great for cold evenings.

Recipe Ingredients for Zucchini Parmesan

3 medium Squash, Summer, Zucchini, Includes Skin
1 medium raw Onion Red
1.5 tbsp Extra Virgin Olive Oil
2 oz Parmesan, Shredded Cheese
3 clove Garlic

Recipe Directions for Zucchini Parmesan

Thinly slice all vegetables into a skillet. Add olive oil and cook veggies until tender. Add Parmesan cheese and simmer covered for about 2 minutes or until cheese melts. Serves 2 large servings or as a side dish serves 4. If you want to spice it up add a can of Mexican tomato mix. Yum,,,
