2 lbs zucchini
2 tsp extra-virgin olive oil
1 dash salt and pepper
1/2 cup parmesan cheese

Recipe Directions for Zucchini with Parmesan

  1. cut zucchini into 1/4" rounds

  2. sautee in 2 tsp olive oil

  3. stir every 2 min until tender and golden

  4. reduce heat

  5. sprinkle with salt and pepper

  6. sprinkle with .5 cup parmesan cheese

  7. cover and cook until cheese is melted
