Variation of Eggplant Parmesan with Zucchini

Recipe Ingredients for Zucchini Parmesan

2 slices mozzarella cheese
1 large zucchini
1/4 cup fat free ricotta cheese
3 tbsp Parmesan cheese
3 tbsp cheddar cheese
3/4 cup tomato sauce
1/4 tsp olive oil
1 egg

Recipe Directions for Zucchini Parmesan

  1. Cut 1 large zucchini into 1/4 inch slices and preheat oven to 350 degrees.

  2. Heat large non stick frying pan and heat up 1/4 tsp olive oil (or olive oil spray).

  3. Whisk egg, dredge each slice of zucchini into egg and saute zucchini in pan on each side until soft.

  4. In a small oven safe (pyrex or corningware) dish ladle 1/4 cup of tomato sauce (recommend a chunky sauce with garlic)

  5. Layer a 1/3 of the zucchini and then 1 slice of mozzarella, then sprinkle with 1 tbsp of parmesan (some herbs are optional here) and then repeat.

  6. Layer the rest of zucchini, then spread remaining sauce, the cheddar cheese and the rest of the parmesan ( and optional herbs)

  7. Put dish into oven and cook until the cheese has melted and browned a bit. (1/2 hour to an hour)
