A healthy alternative to stuffed zucchini or eggplant parmesan

Recipe Ingredients for Zucchini Parmesan

1 large Squash, Summer, Zucchini, Includes Skin
1 cup Old World Style Pasta Sauce
1 oz Mozzarella, Part Skim Milk Cheese
1 serving Trader Joe's Grated Parmesan Cheese
1/2 tsp oregano

Recipe Directions for Zucchini Parmesan

  1. Preheat oven to 350

  2. Cut the zucchini in half length wise and scoop out all of the seeds, leaving the rest of the flesh intact to create 2 "boats" (you want to use a large zucchini for this)

  3. Pour the sauce into the boats, then top with mozzarella, parmesan, and oregano.

  4. Bake until the zucchini is cooked through and the cheese is bubbly and starting to brown, about 30 minutes.
