1 tsp oil
1/4 cup 2% shredded mexican cheese
2 tbsp parmesan cheese
240 g spaghetti sauce
4 cups cooked zucchini
1/8 tsp black pepper

Recipe Directions for Zucchini Parmesan Casserole

Sautee zucchini in oil and heat sauce in microwave. Layer zucchini, sauce and cheese in a baking dish and bake at 350 for 20-25 minutes or until bubbly.
