Recipe Ingredients for Zucchini Parmesan Casserole

1 pound zucchini
2 cups marinara sauce
1/2 cup Parmesan cheese
1 teaspoon crushed red pepper
4 ounce pasta
1 ounce mozzarella cheese
1 teaspoon butter
1/2 cup bread crumbs

Recipe Directions for Zucchini Parmesan Casserole

  1. Bring a pot of water to boil. Slice zucchini and blanch in water for 5 minutes. Remove and drain.

  2. Starting with bottom layer of sauce, then zucchini, then parmesan cheese, salt and pepper, and repeat layers, finishing with mozzarella cheese.

  3. Melt butter in a skillet. Add bread crumbs and stir until browned. Add to top of casserole and bake for 20-25 minutes at 375.

  4. Let stand 10 minutes before cutting.
