Great bake! For a more filling bake you can add 1 1/2 cups chopped, seeded fresh tomatos plus 1/4 cups bread crumbs to the zucchini mixture.

Recipe Ingredients for Zucchini Parmesan Bake

1 tbsp butter
1 tsp. butter
4 cups zucchini, sliced
1 cup grated Parmesan cheese
1/4 cup mayonnaise
1/4 cup sour cream
3/4 cup chopped onion
1/4 cup chopped green bell pepper
2 large eggs, beaten
1/2 tsp salt
1/8 tsp black pepper
1/4 cup bread crumbs

Recipe Directions for Zucchini Parmesan Bake

  1. set oven to 350 F. Butter 1 1/2 Qt baking dish.

  2. Melt 1 tbsp. butter in Lg skilett over Med heat. Saute zucchini in butter in skillet just until tender apx 3-4 mins. Drain well.

  3. Combine parmesan, mayo, sour cream, onion, bell pepper, eggs, salt, and pepper in Lg bowl.

  4. Mix bread crumbs and remaining butter in Sm bowl. Sprinkle over zucchini mixture. Bake until lightly browned, apx 30 min.
