arabicbites.blogspot.com middle eastern zucchini pancakes. My mom makes these a little differently with more flour and eggs but both recipes taste awesome. These are one of my favorite recipes all time!

Recipe Ingredients for Zucchini Pancakes

500 g zucchini
3 scallions, finely chopped
1/2 cup fresh parsley, finely chopped
2 eggs
1/4 cup white flour
1/4 cup wheat flour
1 tbs salt
1 tbs pepper
1/2 tbs olive oil

Recipe Directions for Zucchini Pancakes

  1. Coarsely grate zucchini

  2. Transfer to large bowl and stir in scallions, parsley, eggs, flour, salt, and pepper

  3. Heat oil in frying pan, shallow fry 1/3c mixture until golden brown on both sides and cooked through (4 to 5 min. on each sides). Flatten slightly during cooking

  4. Serve immediately with sour cream (optional)
