Recipe Ingredients for zucchini pancakes

2 zucchini, med. to large, shredded
2 eggs
2 T. whole wheat flour, can use white
1/2 t. salt
1/2 yellow onion, shredded

Recipe Directions for zucchini pancakes

Shred squash and onion. Beat eggs in separate cup. Add salt. Mix into veggies. Sprinkle flour over veggies and toss. Plop by 1/3 cup onto heated, Pam-sprayed skillet and cook a while, then flip. Finish cooking and serve with a sprinkle of soy sauce!
