To make low carb: - substitute low-carb bake mix for the Bisquick substitue Half n' Half for Low Fat Milk Each serving approximately 5 usable carbs

Recipe Ingredients for Zucchini Pancakes

3 Eggs
2 T Low Fat Milk
1/4 cup Canola Oil
2/3 cup Bisquick
1 t Cinnamon
1/2 t Salt
1/2 t Nutmeg
1 1/2 cups Zucchini

Recipe Directions for Zucchini Pancakes

  1. Mix egss, milk, canola oil, bisquick, cinnamon, salt and nutmeg together until no longer lumpy.

  2. Mix in the zucchini. Let batter sit for 5 minutes.

  3. Spray a non-stick pan with canola cooking spray.

  4. Pour 1/4 cup of batter into pan.

  5. Flip when edges are slightly brown

  6. Servie with butter, apple butter, or pureed berries.
