Recipe Ingredients for Zucchini Pancakes

100 g feta cheese
1 1/2 ounces goat cheese
3 tablespoons almonds
1 tablespoon celery leaves
1 tsp basil
1/2 tsp oregano
1/2 cup flour
1 large zucchini
1/2 tsp salt
1 tsp anise seed
2 medium tomato
1 medium onion
1 egg

Recipe Directions for Zucchini Pancakes

  1. Grate zucchini and squeeze out liquid. Mix with 1/4 tsp salt and let rest for 30 minutes before squeezing the rest of the excess liquid out.

  2. In a bowl mix together feta, parsley, herbs, flour, salt, almonds, onion, and egg

  3. Scoop out with a tablespoon onto a hot, greased frying pan, flatten a little and brown on both sides. Put on a plate and top with tomato and goat cheese.

  4. Bake for 5-9 minutes.
