Recipe Ingredients for zucchini pancakes


pancakes:
2 1/2 zucchini
3/4 cup whole-wheat flour
1/2 onion
1 egg
1 tsp baking powder
1/4 tsp salt
1 tbs garlic powder

dip:
1/3 cup sour cream
1 tbs paprika
1 tbs cumin
1/2 tbs salt
1/2 tbs pepper

Recipe Directions for zucchini pancakes

  1. Pancakes:

  2. shred zucchini and onion in large mixing bowl

  3. add egg, flour, salt, and baking powder:mix well

  4. put olive oil in pan & place small handfull, make flat

  5. sprinkle garlic powder over one side

  6. cook until golden brown then flip

  7. Dip:

  8. add all ingredients, mix well
