These were meant to be hashbrowns, but turned out so lovely (with the addition of soy flour) and fluffy that they are insteady delicious flavorful pancakes.

Recipe Ingredients for Zucchini Pancakes

2 cups zucchini, grated
1 cup onion, grated
1/2 cup soy flour
4 eggs
2 tsp. onion powder
2 tsp. garlic salt
1 tsp. salt

Recipe Directions for Zucchini Pancakes

  1. Combine all ingredients in a bowl, stirring until well combined.

  2. Drop hash mixture into a heated skillet and let brown on one side. Then turn and cook the other side.
