Recipe Ingredients for Zucchini Pancakes

2 1/4 cups shredded zucchini
1/2 shredded onion
3/4 cups of Bisquick
2 eggs
1/4 cup of Parmesan cheese

Recipe Directions for Zucchini Pancakes

  1. Beat eggs.

  2. Add Bisquick.

  3. Combine remaining ingredients.

  4. Spoon in heated, greased pan on medium heat.

  5. About 1.5 minutes on each side.

  6. Serve with tomatoes and sour cream.
