Zucchini pancakes made with milk but no eggs

Recipe Ingredients for Zucchini pancakes

2 medium russet potatoes
3 medium zucchini
1 onion
1 tbsp olive oil
1/4 t salt
1/2 t pepper
1/4 cup skim milk
1 tbsp organic all-purpose flour

Recipe Directions for Zucchini pancakes

  1. Grate onion, zucchini and potatoes. Mix well.

  2. Add salt/pepper, milk and flour, and any additional spices you desire.

  3. Heat pan or griddle to medium high heat and add olive oil. and spoon out heaping quarter cups of mixture onto griddle; flatten with bottom of measuring cup. Cook covered until browned, about 7 or 8 minutes, flipping halfway through.
