Recipe Ingredients for Zucchini Orzo

16 oz Orzo Dry
1 medium (2-1/2" dia) Onions
2 clove Garlic
3 large Squash, Summer, Zucchini, Includes Skin
2 tbsp Olive Oil
0.25 cup Parmesan, Grated Cheese
0.5 Teaspoon Thyme
0.5 tsp Oregano, Ground

Recipe Directions for Zucchini Orzo

  1. Bring 6 cups water or chicken stock to a boil and add pasta. Cook 8 to 12 minutes

  2. Use a cheese grater or mandoline to shred zucchini, sauté briefly with chopped onion and garlic until lightly golden.

  3. Add spices to zucchini mixture, stir thoroughly, and then remove mixture from heat.

  4. Combine with cheese and cooked orzo, salt to taste, serve cool or at room temperature.
