Recipe Ingredients for Zucchini-onion-potato pancakes

1 Russet Potato
1 1/2 medium zucchini
1/4 red onion
1/4 yellow onion
1/8 cup vegetable oil
3 medium eggs
1 cup Italian breadcrumbs
1/4 t seasoning salt
1/4 t pepper

Recipe Directions for Zucchini-onion-potato pancakes

  1. Shred or grate veggies and mix in bowl with eggs, salt, pepper and breadcrumbs.

  2. Spoon into frying pan with vegetable oil and fry on each side on medium high for about 2 minutes per side.
