Zucchini-Oatmeal Muffins Recipe

Somewhat healthy muffins that my kids adore. I used whole wheat instead of white for the recipe and usually leave out the pecans.

Recipe Ingredients for Zucchini-Oatmeal Muffins

2 1/2 cups wheat flour
1 1/2 cups sugar
1 cup pecans, chopped
1/2 cup oatmeal, quick, uncooked
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
2 eggs
4 egg whites
1 medium zucchini, shredded
3/4 cup olive oil

Recipe Directions for Zucchini-Oatmeal Muffins

  1. Grease 12 3-inch muffin pan cups. Heat oven to 400 F. In large bowl mix first 7 ingredients. In medium bowl, beat eggs, stir in zucchini and oil. Stir wet ingredients into dry all at once and mix until flour is just moistened. Spoon lumpy batter into cups. Bake for 25 minutes.

  2. Can use mini muffin tins. Bake for 10-12 minutes.
