This bread is moist and yummy! Just the right amount of sweetness, not super rich but still filling. Nuts can be left out if desired.

Recipe Ingredients for Zucchini-Nut Bread

2 cups zucchini, sliced
1/2 cup canola oil
3 eggs
5/8 cup unsweetened applesauce
1 tsp vanilla
3 cups whole wheat flour
1/4 cup wheat bran
3/4 cup brown sugar
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 cup chopped walnuts

Recipe Directions for Zucchini-Nut Bread

  1. Place zucchini, oil, applesauce, eggs, and vanilla in a blender and blend on high until liquified.

  2. In a separate bowl, combine the remaining ingredients and mix well.

  3. Add the liquid mixture to the dry ingredients and stir with mixer until it reaches an even consistency.

  4. Pour into 2 greased 5" by 9" loaf pans and bake at 325 degrees for 50 minutes. (Smaller pans=less baking time. Muffins=15 minutes or less)
