Recipe Ingredients for Zucchini Mushroom Quiche

5 oz frozen chopped spinach, thawed and well-drained
4 oz mushrooms, chopped
4 oz zucchini, chopped
3 eggs
6 oz Fit & Active egg substitute
1/2 cup 1% milk
1/4 cup sour cream
3/4 tsp Italian Seasoning
3/4 tsp garlic powder
1/2 tsp onion powder
1/4 tsp dill
1/4 tsp chopped red pepper
1/4 cup seasoned bread crumbs
56 g (1/2 cup) shredded mozzarella cheese, divided

Recipe Directions for Zucchini Mushroom Quiche

  1. Preheat oven to 350-degrees.

  2. Place spinach in medium bowl.

  3. Chop mushrooms and zucchini. Put in microwave safe bowl and cook, using setting for soft, fresh vegetables, (3-4 minutes, 50% power), until tender. Drain any liquid.

  4. Add zucchini-mushroom mixture to spinach and mix well.

  5. In small bowl, combine eggs, egg substitute, milk, sour cream, and seasonings and beat until well-blended.

  6. Spray 9 X 9-inch baking pan with non-stick cooking spray. Sprinkle bread crumbs over bottom of pan.

  7. Sprinkle half cheese (1/4 cup) over bread crumbs.

  8. Pour egg mixture over cheese and gently spread evenly in pan.

  9. Bake for 25-30 minutes.

  10. Sprinkle remainder of cheese over top of quiche. Return to oven and cook an additional 5 minutes or until toothpick inserted in center comes out clean.

  11. Cool for at leat 10 minutes. Cut and serve.

  12. NOTE: To cut triangles: cut quiche into 4 squares. Cut an "X" in each square, creating triangles. FOR APPETIZERS: Cut each triangle in half again, making 32 appetizer-sized triangles. Store well in air-tight container
