Recipe Ingredients for Zucchini Mushroom fritata

1 Squash, Summer, Zucchini, Includes Skin
1/2 onion
1/2 cup mushrooms
1 tbsp olive oil
3 eggs
1/3 cup milk
1 cup reduced fat Mexican cheese, shredded
1/4 cup bread crumbs

Recipe Directions for Zucchini Mushroom fritata

  1. Saute onion & mushroom in olive oil until softened.

  2. Beat eggs; add milk.

  3. Put zucchini mixture into a pan that has been sprayed with PAM. Pour eggs over the vegetables.

  4. Sprinkle cheese and bread crumbs over the egg mixture.

  5. Bake at 375 for 18 - 22 minutes. Cut and serve.
