I got this recipe from Prevention.com. It uses agave, so it's a low-GI baked treat. I exchanged the oil for apple sauce.

Recipe Ingredients for Zucchini Muffins (Super Low in Fat/Cals)

1 cup whole wheat flour
1 cup all purpose flour
1 1/2 cup shredded zucchini
1/4 cup unsweetened apple sauce
3/4 cup low fat milk
70 g (1/4 cup) agave nectar
2 egg whites
1 tbsp baking powder
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp salt

Recipe Directions for Zucchini Muffins (Super Low in Fat/Cals)

  1. Preheat oven to 375.

  2. Mix all wet ingredients (including zucchini) in a bowl. Add dry ingredients and stir with a spoon until just combined.

  3. Scoop 1/3 cup of batter into lined or greased muffin cups.

  4. Bake for 20 minutes. Remove from pan and cool on a wire rack.
