Recipe Ingredients for zucchini muffins

1 cup applesauce
1 cup sugar
3 eggs
1 tsp vanilla
3 cups whole wheat flour
2 tsp cinnamon
1 tsp baking soda
1 large zucchini
1 cup raisins

Recipe Directions for zucchini muffins

  1. mix all the dry ingredients together

  2. mix all the wet ingredients together

  3. combine these two mixtures

  4. and then add 3 cups grated zucchini

  5. bake at 300 degrees for 1 1/2 hours in greased muffin tins

  6. watch carefully after 1 hour oven temps vary.

  7. after baking remove and let cool

  8. these muffins freeze really well for future use.
