Recipe Ingredients for Zucchini Muffins

1 1/2 cups flour, almond
1/2 cup zucchini, finely diced with skin
3 large eggs
3/4 cup heavy cream
1/2 cup club soda
1/3 cup Splenda
1 1/2 tsp baking powder

Recipe Directions for Zucchini Muffins

  1. Preheat oven to 375 degrees

  2. Grease a 12-cup muffin tin with cooking spray. In a small bowl, mix together 1/4 cup wheat or oat bran and 2 tablespoons of almond flour. (Can just use oat bran.) Evenly sprinkle the pan with the mixture, being careful to coat the sides.

  3. In a larger bowl, whick the remaining ingredients until completely blended. Fill muffin cups about 2/3 full with the batter.

  4. Bake for 20 to 25 minutes, until the tops start to brown. Be careful not to overcook or they will be very dry. The muffins are done when lightly browned or when a toothpick inserted in the center of a muffin comes out clean.

  5. Remove the muffins from the oven and let them cool for 5 minutes before removing from the tin. Serve warm with a pat of butter or at room temperature with cream cheese. Refrigerate or freeze any leftovers.
