yummy muffins, probably could be altered to be "lighter"

Recipe Ingredients for Zucchini Muffins

1 1/2 cup white flour
1 1/2 cup whole wheat pastry flour
1 tsp salt
1/2 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp nutmeg
2 large eggs
1/2 cup skim milk
1/2 cup vegetable oil
1 cup sugar
2 cups shredded zucchini

Recipe Directions for Zucchini Muffins

  1. Stir together flours, baking powder, salt, baking soda, cinnamon and nutmeg.

  2. Beat eggs for 1 minute then add milk, oil and sugar.

  3. Stir in zucchini then gradually add dry ingredients.

  4. Grease muffin tins, fill and bake for 20 - 25 minutes at 375.
