great way to use up abundance of garden fresh zucchini!

Recipe Ingredients for zucchini muffins

2 cups all-purpose flour
1 cup whole wheat pastry flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 tbsp ground cinnamon
3 eggs
1/2 cup vegetable oil
1/2 cup applesauce
1 cups white sugar
1 cup brown sugar
1 tbsp vanilla extract
3 cups grated zucchini

Recipe Directions for zucchini muffins

  1. preheat oven to 325F

  2. sift together all dry ingredients (except sugars)

  3. in large bowl combine eggs, oil, applesauce, white and brown sugar, vanilla, and zucchini.

  4. pour dry into wet and mix until combined.

  5. divide into approx. 30 well greased muffin tins and bake for 28-32 minutes (if using muffin papers, i suggest spraying those too).
