Recipe Ingredients for Zucchini Muffins

3 eggs
2 cups sugar
1 cup vegetable oil
3 cups flour
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 cups zucchini

Recipe Directions for Zucchini Muffins

  1. Mix eggs, sugar, oil. Blend dry ingredients in bowl, then add sugar mixture. Add zucchini.

  2. Pour mixture into lined muffin tins and bake at 350 for 25 - 30 minutes.
