My own creation of lower sugar, low fat muffin

Recipe Ingredients for Zucchini Muffins

3/4 c. flax
2 1/2 c. whole wheat flour
1 t. baking soda
1 t. baking powder
2 t. cinnamon
2 t. nutmeg
1 c. brown sugar
2 eggs
1 t. vanilla
2 c. zucchini
2/3 c. unsweetened applesauce

Recipe Directions for Zucchini Muffins

  1. Mix dry ingredients together.

  2. Mix wet ingredients together.

  3. Mix mixes together.

  4. Pour into 24 muffin tins

  5. Bake at 350 for about 15-25 minutes.
